OUR BACKGROUND

In late 2018, 19 year old chef James and his team put their ideas and culinary skills together to create the most authentic, yet modern mobile Wood-fire pizza company in Sydney ! 

They launched the business to friends and family on March 17th, 2019. With the night being a great success, Pizza Fugitives was born 🍕🧡

THE DOUGH

When it comes to creating an authentic pizza, precision and quality is key. The base of our dough is created with Italian milled ‘00’ flour. Time and patience are key ingredients to creating a dough that is not only light on the stomach but packed with flavour! We ferment our dough for a total of 48 hours, resulting in a digestible and flavoursome crust. 

 

OUR SECRET SAUCE

As Chefs we take great pride in our ability to create the perfect balance of traditional and modern methods to recipes. While our sauce recipe is TOP SECRET, we can reveal that after countless experiments and trials, we have discovered that pre-cooking pizza sauce (while unconventional), creates an intense and flavour packed experience. Our secret sauce has notes of smokiness, umami and tang, this creates flavour depth and layers, especially to pizzas with little to no toppings such as a Margherita.
